Kilner Blackberry And Apple Jam Recipe

  • 350g Cooking apples, peeled, cored and chopped
  • 900g Blackberries
  • 1.2kg Sugar
  • 350ml Water

Method

  1. Put the apples and water into a large stock pot. Bring to the boil, then lower the heat and let them simmer gently for about 10 minutes, or until the apples begin to soften.
  2. Add the blackberries to the pan and cook until all the fruit is tender.
  3. Turn the heat down and add the sugar, stirring slowly until it has fully dissolved.
  4. Increase the heat and boil the mixture briskly for around 20 minutes, or until the jam reaches setting point (use the Kilner wrinkle test below).
  5. Carefully ladle the hot jam into sterilised jars, leaving about 1 cm of space at the top. Release any trapped air bubbles before sealing.
  6. Finish by processing the jars to ensure a good seal.

The Wrinkle Test


When you think the jam might be ready, remove the pan from the heat (using oven gloves) and place it on a heatproof surface. Spoon a little of the hot jam onto a chilled saucer or plate (keep one in the fridge while cooking). Let it cool for a moment, then gently push it with your fingertip. If the surface wrinkles, the jam has set. If it’s still too soft with only slight wrinkling, return the pan to the heat and boil for another 1–2 minutes before testing again.
