Le Creuset Sweet Potato, Sage and Feta Filo Pie Recipe

Ingredients

  • 1x Egg
  • 1x Lemon (zest)
  • 200g Feta Cheese
  • 3 Tbsp Olive Oil (45ml)
  • 2 Red Onions (quartered)
  • 4 Sweet Potatoes (cut in half)
  • 1 Tbsp Fennel Seeds (15ml)
  • 6x Sage Leaves (chopped)
  • 6x Sheets of Filo Pastry
  • Salt & Pepper (to taste)

Method

  1. Prepare the red onion, sweet potato, lemon zest and place inside a Toughened Non-Stick 24cm Chef’s Pan and top with 1 tbsp of olive oil, sage leaves and fennel seeds. Give this mixture a toss to ensure everything is covered with seeds and oil, place in the oven for around 30 minutes on 180°C / 360°F / Gas Mark 4 until soft.

  2. Once cooked through, remove from the oven and transfer into a large bowl. Remove the sage leaves and mash with a fork until combined. Next, crumble in the feta, egg and top with salt and pepper.

  3. Wash and dry the chef’s pan (as you will be using the same pan again). Brush the sheets of filo pastry with the remaining oil and line the pan with four sheets of filo all the way to the side, ensuring that there is pastry hanging over the edges of the pan.

  4. Take the sweet potato mixture and pour into the pastry base and spread evenly. Next, fold over the edges to cover the roasted vegetable mixture. Crumple the last 2 sheets of pastry on top of the pie and cover with the remaining oil.

  5. To bake, place this pie into the oven on a temperature of 180°C / 360°F / Gas Mark 4 and cook for a further 25-30 minutes or until the pastry is crispy and golden brown. To serve, we suggest you leave the pie in the pan for a further 15 minutes once out of the oven to allow the filo to set slightly. This will reduce the risk of the pie ripping.
