Gunpowder Chilli
Ingredients
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 1kg beef/steak mince
- 1 tsp each of smoked paprika, cumin, dried oregano and chilli powder
- 250ml beef stock
- 75g tomato puree
- 2 x 400g can kidney beans, drained and rinsed
- 2 x 400g can chopped tomatoes
- Baked jacket potatoes or cooked rice to serve
- Sour cream and/or grated cheddar cheese to garnish (optional)
Method
- Saute the onion and garlic in the oil until soft
- Add the mince, herbs and spices and stir until the mince has browned
- Add all of the ingredients to the slow cooker and stir to combine
- Turn the slow cooker onto the 'low' setting and leave for 8 hours
- Serve with the baked jacket potatoes or rice and garnish with the soured cream and grated cheese
Slow Cooker Bonfire Fudge
Ingredients
- 500g chocolate, broken into small squares
- 1 tbsp soft butter
- 395g can of condensed milk
- 1 tsp vanilla extract
Method
- Grease and line an 8" square brownie tin
- Place all of the ingredients into the slow cooker and stir to combine
- Turn the slow cooker onto the 'low' setting and stir every 15 minutes
- After two hours, pour the fudge mixture into the tin and the refrigerate for at least 3 hours (preferably overnight)
- Remove the tin from the refrigerator and turn out. Cut the fudge into bite-sized squares. The fudge will last for up to five days.
Slow Cooker Hot Chocolate
Ingredients
- 250g chocolate (at least 60% cocoa solids)
- 450ml semi-skimmed milk
- 5 tbsp light soft brown sugar
- Your choice of alcoholic or non-alcoholic flavouring (optional - for example)
Method
- Add all ingredients to the slow cooker and stir to combine
- Turn the slow cooker onto the 'high' setting and stir every 15 minutes
- After two hours the hot chocolate is ready to serve. It can be kept warm by switching to the 'keep warm' setting on the slow cooker if necessary
- Top with cream, marshmallows etc (if desired) and serve
