  • 250g butter, softened
  • 140g caster sugar
  • 1 egg yolk
  • 300g plain flour
  • 2 teaspoons vanilla extract
  • Ready made icing to decorate

Method


  1. In a large bowl, beat the butter and sugar together until the mixture is light and fluffy in texture.
  2. Add the egg yolk and vanilla extract, then mix briefly until well combined.
  3. Slowly sift in the flour, stirring until everything is thoroughly combined.
  4. Wrap the biscuit dough in cling film and refrigerate for an hour.
  5. Pre-heat the oven to 190ºC, 375ºF, Gas Mark 5.
  6. Dust your work surface lightly with flour and roll the dough out to a thickness of about 3mm.
  7. Use bunny or Easter-themed cookie cutters to shape the biscuits and arrange them on a baking tray lined with baking paper.
  8. Bake for 12-14 minutes, or until golden brown. Allow the biscuits to cool.
  9. Decorate with icing to create your very own adorable bunny biscuits.
