200g Unsalted Butter
200g Light Brown Sugar
150g Granulated Sugar
450g Chocolate Chips
1 Tsp Baking Powder
2 Tsp Vanilla Extract
450g Plain Flour
2x Large Eggs
1 Tsp Salt
Method
Pre-heat the oven to 375°F / 190°C / Gas Mark 5.
Line a large cookie sheet with parchment paper (makes cleaning easier).
Attach the Flex Edge Beater to the attachment hub on the stand mixer, add the butter and both brown and white sugar to the bowl and stir on a low speed for 1 minute, you will need to gradually increase the speed to 4 for around 2 minutes.
Add the eggs and vanilla flavouring to the bowl and mix on speed 4 until thoroughly mixed (around 1 minute).
In a separate bowl, mix the dry ingredients including the chocolate chips and gradually add this to the wet ingredients whilst mixing on a low speed and keep mixing until fully incorporated.
On the lined cookie sheet, spoon round scoops evenly. Bake the cookies until golden brown (around 10 - 12 minutes). Once baked, allow the cookies to rest for a couple of minutes.
Put on a plate or platter for friends and family and enjoy.
