Simply Delicious Beef Casserole Recipe
This hearty and easy to make beef casserole is packed with tender meat, wholesome vegetables and rich flavours. Perfect for busy weeknights or cosy family dinners, it’s a comforting dish that’s as simple as it is delicious!

Ingredients
- 800g (approx) stewing beef, cut into large chunks
- 2 tbsp vegetable oil
- A knob of butter
- 2 tbsp plain flour seasoned with black pepper
- 1 onion, chopped
- 1 garlic clove, peeled and finely chopped
- 4 carrots, peeled and cut into chunks
- 800ml beef stock
- 2 celery sticks, cubed
- 2 tbsp worcestershire sauce
- 3 sprigs fresh sage
- 2 tbsp tomato purée
- 300g broccoli

Method
- Preheat the oven to 160ºC/300ºF/Gas mark 2.
- Heat the oil and butter in a casserole dish on medium heat. Add the onion, celery and sage leaves and fry for 3 to 4 minutes.
- Turn down the heat and add the garlic. Cover and leave to sweat until tender.
- Meanwhile, toss the meat in a little seasoned flour.
- Once the onion and garlic are soft, add the carrots, beef stock, tomato purée, worcestershire sauce and beef, and gently stir together.
- Cover and cook in the oven for 2 and a 1/2 hours.
- Taste and adjust the seasoning with salt and pepper, then add the broccoli. Re-cover and cook for a further 30 minutes or until the beef is soft and tender.
- Serve with creamy mashed potato or warm crusty bread.
